- Sichuan & Chongqing — beef-tallow nine-grid broth; tripe seven-up-eight-down, duck intestine fifteen seconds
- Old Beijing — clear-broth lamb with sesame paste, chive flower and fermented tofu; slices thin enough to see through

- Yunnan — wild mushroom broth where the soup outshines the meat
