A British kettle does one thing: 100°C, then off. Chinese tea does not work that way — green tea wants around 80°C, oolong nearer 95°C, and pu-erh is better simmered than steeped. These health kettles hold a set temperature for hours and run slow programmes for herbal brews, ginger and jujube tea, and sweet soups.
