So the heart of this bundle isn't just the pot — it's the manual meat slicer. Half-freeze your beef for two hours and it shaves into proper marbled hotpot rolls, at half the cost of ready-sliced.

  • Sichuan & Chongqing — beef-tallow nine-grid broth; tripe seven-up-eight-down, duck intestine fifteen seconds
  • Old Beijing — clear-broth lamb with sesame paste, chive flower and fermented tofu; slices thin enough to see through
  • Chaoshan — clear-water beef hotpot with sacha dipping sauce
  • Yunnan — wild mushroom broth where the soup outshines the meat
  • Northeast — pickled cabbage and pork belly with blood sausage, glass noodles and frozen tofu
  • Guizhou — sour fish soup with litsea oil
  • Guangdong — da bin lo: pork tripe and chicken broth, soup first, then dip
