The DMJ3 runs hot and cold: hot for soy milk and grain pastes, cold for smoothies and milkshakes, and the dry-grind cup turns out multigrain powder and chilli flakes. A 14-blade steel head — one machine doing the work of three.
One machine, four seasons of drinks
Hot (autumn and winter) — northern savoury soy milk, Cantonese almond paste, Shaanxi youcha, Hunan black sesame paste, Jiangnan osmanthus jiuniang soup, Shandong millet and pumpkin porridge
Cold (spring and summer) — Cantonese mango sago, Sichuan bingfen base, Hong Kong-style papaya milk, Taiwanese taro milkshake
Dry grind — multigrain powders, baby rice cereal, Sichuan chilli flakes and Sichuan pepper powder (you can't buy them freshly ground in the UK — your own grind is ten times more fragrant), sesame salt, coffee beans
Prep work — garlic chilli sauce, chopped chilli, minced ginger; the base of any hotpot dipping sauce
