Cheung fun (rice noodle rolls) are the one dim sum dish that defeats a home kitchen without the right kit. The batter has to set in seconds on a flat, very hot surface and then be scraped and rolled while it is still soft. A stacked bamboo steamer runs too cool and too slow, and the sheet tears as you lift it.

These are drawer-style steamers built for the job: flat trays that slide in and out over a full-power steam bed, one or two rows at a time, so you can pour, steam, scrape and pour again in a rhythm. They also do steamed egg, whole fish and rice-flour cakes.
