After a few years abroad, the hardest thing to recreate in a British kitchen turns out to be one word: wok hei.
This Supor pumpkin-pattern iron wok is 26cm — a household size that handles daily stir-frying, searing and griddling for one to four people. The uncoated fine-iron body takes a metal spatula without complaint; scratch it all you like.
The traditionally crafted pumpkin-ridged surface gathers oil and conducts heat, letting oil settle along the grooves so frying heats evenly. The more you cook, the more seasoned and glossy it grows — the sort of wok that follows you from your master's degree into working life.
Afraid of non-stick coatings peeling, but put off by how rough and needy ordinary iron can be? Branded fine iron covers both ends: after everyday cooking, rinse with hot water, dry, wipe on a thin film of oil, done.
A little recipe
- Chilli-fried pork: heat the wok, swirl oil to coat, render sliced pork belly until the fat runs, then green chillies and garlic on high heat for ten-odd seconds — serve while the wok hei is alive.
- Egg-fried rice: hot wok, cool oil, day-old rice tossed over a high flame until every grain wears its own coat of egg.

Hunan chilli-fried pork and stir-fried yellow beef; Sichuan-Chongqing twice-cooked pork and cured pork with garlic shoots; Cantonese beef chow fun and black-bean-chilli spare ribs; northeastern di san xian; Jiangnan stir-fried prawns; northwestern cumin lamb — half of Chinese cooking is stir-fried, and this wok is the foundation under that half of the empire.
