• On the baking pan side — Shandong grain pancakes, Tianjin jianbing guozi, Northeastern egg-filled bing, the white baiji bun for Shaanxi roujiamo, Jiangnan spring onion pancakes, Cantonese turnip cake crisped golden, Yunnan rushan, Xinjiang naan warmed through
• The two together — a cup of hot soy milk and a spring onion pancake fresh off the pan; for a lot of us, that's the ten minutes we miss most after leaving home
