Hot pot is cooked at the table, not carried to it, which is why a saucepan on the hob never quite works. These sit in the middle of the table and hold a rolling simmer all evening. The yuanyang pans (twin broths, one spicy and one clear) let people who disagree about chilli eat from the same pot.

Sizes run from a 1.2L pot for a single bowl of noodles to 6L induction-heated pans for a table of six. Split-base models lift off the element so the pan itself goes in the sink, which matters more than it sounds after an evening of tallow broth.
